The 2017 Sherwood Pinot Gris was made from fruit harvested from our Pilgrim, Terrace, Georges Road and Stirling vineyards in the Waipara Valley. Roughly 6% of the fruit was fermented “on skins” like red wine, resulting in an “orange” wine that provides broader phenolics, a rounder palate and spicy complexity. The remaining fruit underwent a number of treatments including indigenous fermentation, extended skin contact, whole bunch fermentation and barrel fermentation. The parcels of wine were then blended, filtered and bottled.
